1/2 cup almond flour

1/2 cup ground flax seeds

2 heaped tbsp sesame seeds

1 heaped tsp fresh garlic

1/2 tsp fine salt

2 heaped tsp onion flakes

1 heaped tsp dried parsley

2 heaped tsp lemon zest

3 tbs honey

3-4 large chicken fillets tenderized

3-4 eggs beaten

4 tsp olive oil

2g paprika for garnish

Freshly chopped Italian parsley or thyme for garnish

Metode:

Pre heat oven to 200’C

Prepare baking tray with foil and non-stick spray

Cut the chicken breast into strips and place in a mixing bowl, pour honey over to seal.

For the crumbs:

Mix the almond flour, ground flax seeds, sesame seeds, fresh garlic, salt, onion flakes, dried parsley and lemon zest.

Whisk the eggs

Start by dipping the chicken strips in the egg then roll in the crumbs and then onto the baking tray. Repeat with all the strips.

Bake for 20 minutes

Remove from the oven, drizzle with olive oil and sprinkle with paprika and place back into the oven for another 5 minutes

Serve warm with side of your choice
