One whole panettone left over from Christmas
2 eggs
1 cup of milk
1 cup of cream
1 cup of white sugar
100ml brandy
B-Well non-stick spray
Metode:
- Separate the egg yolks and stir into the sugar to form a paste in a mixing bowl.
- Heat the milk, cream and brandy together and heat until just below boiling.
- Slowly add the hot mixture into the bowl to make a thin custard stirring constantly to ensure the eggs do not scramble.
- A little bit at a time.
- Line a baking dish with B-Well non-stick spray.
- Line the bottom of the dish with slices of panettone cut around three centimeters thick.
- Pour the custard over the slices until very moist.
- Add a second layer if necessary to fill the dish.
- It is important that the cake be completely moist with the custard.
- If it is not make more.
- Place the baking tray in a 180˚C oven for around 10 minutes until the custard and cake starts to brown on top.
- Serve immediately hot.
- Spoon out large portions into bowls with vanilla ice cream or whipped fresh cream to garnish.
