Pellie Grobler – Trout Roulade
150g smoked trout
1 Tbs Cream Cheese
1 Tbs Horseradish
1 Tbs B-well Light Mayonnaise
1 Tbs Hummus
1 Avocado squashed
Salt & pepper to taste
- Finely chop 1 ribbon of trout, mix together with the cream cheese, B-well mayonnaise and horseradish.
- Add salt and pepper and lime zest to taste.
- Lay 3 ribbons of trout on cling film, scoop some of the filling in the center.
- Roll the rest of the trout over the filling, roll into sausage shape.
- Refrigerate for 1 hour before serving
- Mash one avocado and add salt & pepper and a squeeze of lime juice.
- Mix in the hummus.
- To plate, remove the cling-wrap from the trout and cut into 3 pieces.
- Scoop a tablespoon of the avocado mix onto the plate and spread with a spoon.
- Place the trout roulade onto the avocado mix.
- Finish with a bit of lime zest.
