150g smoked trout

1 Tbs Cream Cheese

1 Tbs Horseradish

1 Tbs B-well Light Mayonnaise

1 Tbs Hummus

1 Avocado squashed

1 Lime

Salt & pepper to taste


  • Finely chop 1 ribbon of trout, mix together with the cream cheese, B-well mayonnaise and horseradish.
  • Add salt and pepper and lime zest to taste.
  • Lay 3 ribbons of trout on cling film, scoop some of the filling in the center.
  • Roll the rest of the trout over the filling, roll into sausage shape.
  • Refrigerate for 1 hour before serving
  • Mash one avocado and add salt & pepper and a squeeze of lime juice.
  • Mix in the hummus.
  • To plate, remove the cling-wrap from the trout and cut into 3 pieces.
  • Scoop a tablespoon of the avocado mix onto the plate and spread with a spoon.
  • Place the trout roulade onto the avocado mix.
  • Finish with a bit of lime zest.
