Fegatini di pollo alla mostarda

500 g Fresh raw chicken livers well drained
1 Large onion finely diced
2 Cloves of garlic finely diced
250 ml Thick cream
1 tot of Brandy
3 Tablespoons of strong Dijon Mustard
1 Tablespoon of dried sage
B-well Olive oil
Metode:
- Fry off the onions and garlic for thirty seconds in a good slug of olive oil in a very hot pan.
- Toss in the livers and sage and stir so as to sear the livers evenly.
- Keep stirring gently so they don’t break or stick. As they are lightly browned add the cream, brandy and mustard and allow to amalgamate with the delicious pan juices.
- Season to taste (I find that loads of black pepper is really good for flavour in this dish) and serve as the sauce has thickened.
