For the tart filling:
3 Cans Condensed Milk
9 Egg Yolks
1 Cup Lemon Juice
For the base:
1 packet Tennis Biscuits (crushed)
50g Melted Butter
For the Meringue:
100g Egg Whites
200g Castor Sugar
Pinch Salt
B-well Canola Baking Spray
Metode:
- Mix melted butter and crushed biscuits to form a crumble.
- Spray B-well Canola Baking Spray on the bottom of the cake tin.
- Line cake tin with crumble tightly to form a base.
- Set in the fridge.
- Mix together – egg yolks, lemon juice and condensed milk
- Add to base of tart.
- Bake for 12 min @ 180˚C
For the meringue:
- Over a double boiler, mix sugar and egg whites until the sugar is dissolved.
- Transfer this mixture to a standing mixer and mix at high speed for 8 minutes.
- Serve meringue as a topping for your tart – it looks brilliant with a slight burn from a kitchen torch!
