Bestanddele:
400g piece of trimmed fillet
1 cupful of sliced mushrooms
1 clove of smashed garlic
½ cup Parsley
4 sprigs of Thyme
1 cup of runny cream
50g butter
75ml Betta way olive oil
½ cup of Marsala wine (or port / full cream sherry if this is not to hand)
200g of cooked fettuccine pasta
Salt and black pepper to taste

Voorbereiding:
Slice the fillet into thin strips similar to a goulash, pan fry in the olive oil over a medium heat with the smashed clove of garlic. As the meat browns lightly, add the mushrooms and thyme and parsley. The mushrooms should just start to soften. Stir and combine. Add the marsala and reduce and bubble to remove the alcohol for 30 seconds. Add the cream and thicken. Another 90 seconds stirring. Throw in the cooked pasta and stir into the sauce and meat strips.

Serve on an attractive serving platter garnished with micro herbs.
