2 Tbs B-well Canola Oil
½ Onion chopped
1 Tsp Chopped garlic
1 Tsp Tomato paste
½ Each Red and Yellow Pepper (chopped)
1 Tbs Curry Powder
½ Tsp Cumin
½ Tsp Coriander
1 Tsp Apricot Jam
½ Can Coconut Milk
1 Can Canned tomatoes
400g Prawns of your choice
½ Tsp each crushed ginger, chilies and turmeric
Salt & pepper to taste
Starch of your choice –
rice or bread
Metode:
- Place pan on medium heat.
- Fry onion and peppers for 5 minutes.
- Add garlic, tomato paste, curry, cumin, coriander, chilies, turmeric and ginger.
- Fry for 2 minutes for the flavours to marry.
- Add canned tomatoes and coconut milk.
- Cook for 5 minutes.
- Add apricot jam. 8. Add Prawn and cook for 5 minutes.
- Serve with starch of your choice.
