Bestanddele:

1 large onion diced

1 stalk celery thinly sliced

1 finely diced carrot

5g of dried origanum

1 tin of haricot beans

410g, 1 glass of dry white wine

4 Italian Sausages with Fennel, Garlic and Chilli.

1 small head of broccoli broken into little florets

Extra virgin olive oil

Salt and Black pepper to season

Metode:


  • In a large-ish casserole place 50ml of olive oil on a medium heat.


  • Add the onions, celery and carrots (known as a sofritto) and fry until softened.

  • Add the sausages cut into 5cm chunks.

  • Fry until they brown slightly.

  • Deglaze the delicious flavours of the sofrito and sausage off the pan with the glass of white wine.

  • Add the tin of beans (rinsed off under cold water in a strainer).

  • Add the origanum and seasoning. 

  • As the beans soften after three minutes add the florets of broccoli and allow them to simmer through.

  • Adjust seasoning before serving.

  • Serve with fresh bread for a delicious hearty meal.
