1 large onion diced
1 stalk celery thinly sliced
1 finely diced carrot
5g of dried origanum
1 tin of haricot beans
410g, 1 glass of dry white wine
4 Italian Sausages with Fennel, Garlic and Chilli.
1 small head of broccoli broken into little florets
Extra virgin olive oil
Salt and Black pepper to season
Metode:
- In a large-ish casserole place 50ml of olive oil on a medium heat.
- Add the onions, celery and carrots (known as a sofritto) and fry until softened.
- Add the sausages cut into 5cm chunks.
- Fry until they brown slightly.
- Deglaze the delicious flavours of the sofrito and sausage off the pan with the glass of white wine.
- Add the tin of beans (rinsed off under cold water in a strainer).
- Add the origanum and seasoning.
- As the beans soften after three minutes add the florets of broccoli and allow them to simmer through.
- Adjust seasoning before serving.
- Serve with fresh bread for a delicious hearty meal.
