Fortunato Mazzone – Sicilian Orange Salad with summer Bruschetta

For salad:
4 large peeled oranges
One handful of torn mint leaves
2 fennel bulbs
One cup of black olives
1 lemon
50ml B-well extra virgin olive oil
50ml white balsamic vinegar
Salt and pepper
For Bruschetta:
12 Slices of toasted ciabatta bread
3 Large cloves of peeled garlic
4 Ripe tomatoes
1 Ball of buffalo mozzarella
(or for di latte if unavailable)
Handful of torn basil leaves
50ml B-well extra virgin olive oil
Salt and pepper
Metode:
For salad:
- Cut the oranges into even, round slices, about 5ml thick and layer out on a large plate evenly.
- Top this with the fennel bulbs, sliced crosswise into little slices roughly over the top.
- Sprinkle the olives and mint leaves over the mixture.
- Squeeze over the juice of a full lemon and 50ml of white balsamic vinegar.
- Drizzle the salad with a little B-well olive oil.
- Season to taste with salt and pepper.
For Bruschetta:
- Cut one clove of garlic in half, scrape the surface of the toast lightly with the freshly cut face of the clove.
- Drizzle the slices with a little B-well olive oil.
- In a mixing bowl, mix the tomatoes diced into cubes, cube the mozzarella and mix in.
- Add one clove of garlic finely diced, the torn basil leaves and the rest of the olive oil.
- Season to taste with salt and pepper.
- Spoon the mixture generously over the slices of bruschetta.
